labneh
Labneh (or labné) is a tangy, strained yogurt that accompanies almost every Lebanese meal. Traditionally served drizzled with olive oil and paired with bread and olives, making homemade labneh is incredibly simple and delicious.
Ingredients :
1 cup Greek yogurt (cow’s milk)
1 cup sheep’s milk yogurt
Salt
Preparation :
Mix both yogurts together and add salt. Pour the mixture onto a fine cloth like cheesecloth or muslin. Tie the corners tightly with a string or elastic and let it drain over a colander in the fridge overnight.
The yogurt will thicken and become creamy, resulting in labneh.
Labneh is traditionally enjoyed drizzled with olive oil, zaatar, and pita bread. For a twist, try it with a mint sauce made from salt, olive oil, and toasted sesame seeds — absolutely divine. It’s also delicious spread on toasted bread with cucumber slices.
