Ricotta Toasts with Roasted Tomatoes

Delicious Italian-inspired toasts that are quick and easy to make, using simple ingredients like tomatoes, garlic, and basil. Perfect for lunch or as an appetizer.

For this recipe, I prefer cherry tomatoes, but you can also use chopped regular tomatoes. Roasting the cherry tomatoes intensifies their sweetness and caramelizes their flavor. You can substitute ricotta with fresh goat cheese, such as Petit Billy, and swap the herbs for tarragon, parsley, or oregano for a different twist.

Ingredients for 4 people:

  • Country-style bread (rustic bread)

  • 3 to 4 generous handfuls of cherry tomatoes

  • Ricotta cheese

  • 2 garlic cloves

  • Olive oil

  • Salt, pepper

  • A few chili flakes (optional)

For the tomatoes:

Preheat the oven to 200°C (400°F). Wash and place the tomatoes in an ovenproof dish with a drizzle of olive oil, roughly chopped garlic cloves, salt, pepper, chili flakes, and a very small amount of water. Mix well. You can also add herbs like thyme, oregano, or rosemary. Roast for 30 minutes.

Once the tomatoes are cooked (they should be soft and confit), toast 4 thick slices of country bread. Generously spread ricotta on each slice. Top with the roasted cherry tomatoes along with some of the cooking juices, a few basil leaves, and a drizzle of olive oil. Adjust seasoning and enjoy!
