White beans, tuna, tomato sauce, and basil

I love this tomato and white bean recipe, which I often make on lazy days because it’s quick, easy, and nourishing. It’s especially comforting on a rainy or chilly day. The flavors of garlic, onion, tomato, and fresh basil immediately transport me to Italy or a small Mediterranean village… simple cooking that makes you travel without needing many ingredients. A bit like a stew, this dish is delicious served with crusty bread, a drizzle of olive oil, and a touch of pepper.


Ingredients for 2 servings:

  • 2 garlic cloves

  • 1 onion

  • 1 can of white beans (400 g)

  • 1 can of tomato pulp (400 g)

  • Olive oil

  • 1 can of tuna in oil (160 g)

  • A handful of fresh basil

  • Salt and pepper


 

Preparation :

  • Peel and finely chop the onion and garlic.

  • In a pan or saucepan, heat 1–2 tablespoons of olive oil. Add the onion and garlic and sauté for a few minutes until they become translucent.

  • Pour in the tomato pulp and let it simmer for 5–10 minutes until the sauce thickens slightly.

  • Drain and rinse the white beans, then add them to the sauce. Stir and let heat for a few minutes.

  • Drain the tuna and add it to the mixture, trying to keep fairly large pieces. Mix gently.

  • Season with salt and pepper, then add the fresh basil.

  • Serve on plates, drizzle with olive oil, and accompany with crusty bread.
