White beans, tuna, tomato sauce, and basil
I love this tomato and white bean recipe, which I often make on lazy days because it’s quick, easy, and nourishing. It’s especially comforting on a rainy or chilly day. The flavors of garlic, onion, tomato, and fresh basil immediately transport me to Italy or a small Mediterranean village… simple cooking that makes you travel without needing many ingredients. A bit like a stew, this dish is delicious served with crusty bread, a drizzle of olive oil, and a touch of pepper.
Ingredients for 2 servings:
2 garlic cloves
1 onion
1 can of white beans (400 g)
1 can of tomato pulp (400 g)
Olive oil
1 can of tuna in oil (160 g)
A handful of fresh basil
Salt and pepper
Preparation :
Peel and finely chop the onion and garlic.
In a pan or saucepan, heat 1–2 tablespoons of olive oil. Add the onion and garlic and sauté for a few minutes until they become translucent.
Pour in the tomato pulp and let it simmer for 5–10 minutes until the sauce thickens slightly.
Drain and rinse the white beans, then add them to the sauce. Stir and let heat for a few minutes.
Drain the tuna and add it to the mixture, trying to keep fairly large pieces. Mix gently.
Season with salt and pepper, then add the fresh basil.
Serve on plates, drizzle with olive oil, and accompany with crusty bread.
